Apple-Brined Turkey

15-17 Lb. free range turkey
1-1/2 Lb. Sea Star™ sea salt
1-2 gallons Organic (pasteurized) apple juice - just enough to cover turkey
4 Long branches fresh rosemary
20 Cloves fresh garlic (peeled and sliced in half)

Dissolve Sea Star™ sea salt in the apple juice. Place clean fresh turkey in a deep pot and pour the salted apple juice over it. Add the garlic cloves and rosemary branches around the turkey. The salted apple juice needs to cover the turkey. Cover the turkey with cheese cloth so it does not become dry. Brine overnight.

Remove turkey from pot and pat dry with a kitchen towel. Place in your smoker and follow the directions for your smoker. It is important to place turkey in your

smoker breast down. This will keep the breast juicy and tender.

NOTE: Most smokers take about 3 batches of wood chips and smoke for about 18 hrs. Placing the salt cured turkey in the smoker in the afternoon and removing it the next morning (replacing the wood chips as needed) works well.

Lavender StarIf a smoker is unavailable, turkey may be roasted in a 350° oven 3-1/2 to 4 hours.
