Chocolate Truffles

1 Cup cream (preferably organic)
6 ounces high quality semi-sweet chocolate, chopped
6 ounces high quality bittersweet chocolate, chopped
1 tsp. Sea Star™ Fleur de Sel
2 ounces unsalted butter, chopped (preferably organic)
4 ounces high quality dark cocoa powder

Bring cream to boil, whisk in chopped chocolate and fleur de sel. Once completely dissolved, whisk in butter. Chill. Lavender StarScoop out small balls of truffle mixture and roll in cocoa.

Serve in small paper or foil fluted cups. Enjoy!
