Summer Salad

Serves 6

For Salad:
4-5 Endive
1 head butter lettuce
1 bunch arugula
4 branches fresh mint
4 branches fresh basil
4 branches fresh Italian parsley
1 Tbsp. fresh lemon thyme
2 small star fruit
1 bunch young radishes
4 oz. haricot verts (French style green beans)

For Vinagrette
Sea Star™ Fleur de Sel


1 Tbsp. Dijon mustard
1 fresh garlic clove
2 Tbsp. red wine vinegar
4 Tbsp. extra virgin olive oil

To Prepare:
Salad: Wash and refresh lettuces and herbs. Pluck leaves from herbs, leave whole, but chop lemon thyme. Blanch haricot verts in salted water and refresh. Clean radishes.

Lavender StarVinaigrette: Combine mustard, crushed garlic, fleur de sel, vinegar, with olive oil (or a little vegetable oil, optional, to taste).
