Watermelon Soup

5 Cups ripe red seedless watermelon
1-1/2 oz. sherry vinegar
3 Tbsp. mint or tarragon (save herb tops for garnish)
3 Tbsp. port

To Prepare:
Puree fruit adding vinegar, herbs, and port. If necessary, add sugar a little at a time to sweeten.

Watermelon Sorbet or Granita:
5 Cups ripe yellow seedless watermelon
1-2 fresh lime (zest and juice)
Sugar to taste

To Prepare:
With a vegetable peeler, remove zest from lime
then finely julienne with a knife. Puree watermelon, lime juice, and sugar (to taste). Freeze in sorbet churn,

or make a granita in a bowl, stirring occasionally.

Yellow and Red Watermelon with Sea Star™ Fleur de Sel
4 thick slices seedless yellow watermelon
4 thick slices red seedless watermelon
1/2 tsp. Sea Star™ Fleur de Sel

To Prepare:
With a knife or melon baller, or cookie cutters, cut the melon into interesting shapes.

To Serve Triplet:
Ladle soup into soup plates. Top with a quenelle of sorbet , several fresh watermelon slices or balls. Garnish the plates with the fresh herb sprigs and sprinkle the fruit slices (or balls) with fleur de sel. Enjoy right away!
